You should try Zürcher Geschnetzeltes. It's roasted fine cut veal (but pork works also very well), shallots, brown button mushrooms, white wine, cream, lemon juice and parsley. Traditionally served with rösti or spätzle.

I don't think it's right that you leave eastern European countries out, they produce a huge variety of cold smoked products and cheeses as well as some particularly hearty national staples with lots of variation. Northern Europe makes sense though, outside of salted cod northern Europe has very little to offer in terms of national cuisine. This really shows through in Scandinavian cuisine where in lacking the cultural lineage you see chef's try to refine individual ingredients down to their purest flavor. A completely modern fabrication devoid of heritage imo.
