Regardless of whether it's really shitty veal, or more likely... "pork", look into rich Portuguese stews. You could throw either in there and be fine. I'm a fan of using gizzards in there.

Simmer it in onions, tomato, garlic, wine; throw in some fresh herbage later. Serve with bread.
