The nutritional contents of the humble potato are basically enough that you can live fairly healthfully by eating nothing except potatoes (but you would be better off supplementing with dairy and / or beans for a better protein profile).

I'm honestly perfectly happy with a baked potato lightly sprinkled with salt and pepper.
When I lived in Japan, simple baked sweet potatoes were a very popular snack. I think I could enjoy white potatoes that way too.
