Why are processed tofu products you buy at the store (meat alternatives) so shitty when fresh tofu can be made great? Maybe I'm buying bad brands, if so is there any brands that are guaranteed tasty?

Filipino here, fuck that shit. Filipino food is trash cuisine. It's the Banquet meals of asian food. In no other culture is sugar and spaghetti considered good, nor do they put spam in everything. They also lack presentation in even the most basic sense.

Every good Filipino restaurant in socal is fusion for a reason.

Monitoring this thread- a vegetarian friend left some tofu in my fridge and told me to just eat it, what do?
Any recipies would be appreciated.
I have a pressure cooker and vegetable oil to fry with- if all else fails I was thinking of just pressing as much mositure as I can out of it, panko breading it, and then frying it into bootleg tenders.

Dry, use a tofu press (or something heavy) to drain the remaining water, marinate, carefully fry. Tastes best like that but I'm usually too lazy so I just fry and deglaze it with soy sauce or something.

Just make some tofu vegetable curry with rice if you have the spices.

Grilled. I use hot brine then press it to get out extra moisture. Brush on a little oil to keep it from sticking. Plain in miso soup.

Soak it in hot brine for 15 mins before you press it to fry it. It's pretty bland, so you can season it however you want.

I really like agedashi tofu. It was really disappointing from my last delivery order though. I don't expect it to be as good as right out of the kitchen, but it wasn't even agedashi tofu. It was just fried tofu strips (kind of like pic related but more fried) that got somewhat spongy but not so thoroughly fried that the sponginess was good. It was just in between and tasted unfortunately reminiscent of tofegan products.

Just a from local restaurant through Grub Hub. There are a lot of Japanese restaurants here. Agedashi is cubes (large ones based on what I've had) of silken tofu tossed in potato starch and quickly deep fried and served in a shallow amount of broth (kept on the side for delivery). The texture is completely different from strips of firm fried tofu.

I don't ever coat or batter my tofu. I just cut the extra firm tofu into a dozen pieces and then fry it in peanut oil. I use a wok, but a flat bottom pan should work. Move the pieces around the pan to ensure none get burned. Flip once and set aside. Then cook your vegetables with mirin soy sauce and some hoisin at the end. Add the cooked tofu to the vegetables and stir to impart the flavors to it.

if you want to get really exciting and delay eating it, and if it's medium, you can freeze it, then take it out to thaw and water expanding will have torn big pockets making it extra spongy.
it has a grittier texture that is better for most things to stand out and also absorbs marinade better
