what do you guys marinade your chicken in?

I usually use So y Sauce, siracha and lemon juice. 12 hour marinade at least, up to 24 hours at most.

People are being mean to you OP ;_; I'll let you in on a secret. There's no need to marinate chicken, most of the flavours are steamed out during the cooking process. Rare or medium rare chicken will give you the tasty results you're looking for.

12 hours is highly unnecessary, especially for a marinade using lemon juice and by 24 the meat is probably beginning to decompose from the acid.

i would recommend no more than 8 hours anon.

That sounds like a pretty good marinade. 24 hours is overkill for an acidic marinade though. Really depends on what I want, sometimes as simple as just a brine, other times tandoori marinade, or brown sugar, soy sauce, chili paste, lemon (similar to yours).

I'm partial to a dry marinade of scallions, fresh ginger, and minced garlic. Let it sit in the fridge for several hours and add salt and pepper maybe an hour before cooking. I think it's maybe considered a "Chinese" (Americanized Chinese) style of marinade. It works really well in rice dishes and salads.

I like to do soy sauce, a bit of brown sugar, salt, pepper, garlic/ginger paste (a 1:1 puree I make with food processor) and olive oil. Little cayenne or something if I want them to have some heat.
