Mett is eaten raw. Its minced pork often eaten with chopped onions or onions in rings.

The meat is slaughtered on the same day as the mett is prepared as mett will go bad 1 day later.

Always be adventurous with your pallette anon :)
We all enjoy a beautiful steak or some roasted chicken.

Mett has a beautiful creamy texture and is best paired with a bit of salt and black pepper as seasoning, very simple preparation.

Some people enjoy buttering their breadrolls or eating a pickle on the side of their mett, though I preffer the classic chopped onions, salt and black pepper myself.

Tartare generally is a bit rougher, though the biggest difference between mett and these dishes is the type of meats. kitfo and tartare being bovine and kibbeh nayeh being lamb

mett, due to the fact that it is pork is a bit fattier in content. 20-35% fat is normal for mett. This means that the meat is a bit creamier, to describe it for you. The fat also gives the mett a bit of a smoother texture both of these things blending very well with the crunchy texture and the sharp taste of the raw onions.

If you are ever in Germany I would definitely recommend it my friend :)

Just like sushi, the meat is flash frozen and must be below 2 degrees celsius before ground up.

The process of flashfreezing kills any parasites that may or may not have been in the meat.

A common misconception in the producing of raw foods is that it is not safe to eat. Where I live we have very strict laws and rules in place to ensure the quality of the meat you purchase.

As previously said the raw pork is flash frozen and the mett produced is safe to eat and delicious :)

Think of it in this way; many people would try sushi but not a mammal like a pig. To me this is odd because there can be parasites in both the water and on land though people will worry less about eating sushi.

I will be enjoying some more mett tomorrow when I drive over to Germany again!

Hate to break it to you but Wisconsin has nearly this exact thing as a regional dish. it's called a cannibal sandwich. its mostly popular with older people though. And people demonize it a lot anyway.

I'd love to try some of your delicious mett OP. I think you would have to be a gay man to think that it's unsafe to eat raw pork with regional delicacies like this have been reliably consumed for hundred of years

Fish are very far removed genetically speaking so the vectors they carry, and the parasites, are not able to live in our bodies very well.
Pigs on the other hand are very close to humans in terms of genetics so their sicknesses can and do directly transfer to humans
