How long was it dry aged?

15-20 day dry aging really doesn't change all THAT much.

Dry aging for 45-60 days though gives a pretty strong aged flavor.

90 days+ gives a VERY strong aged flavor.

I would NOT recommend anything over 90 day dry aged unless you really know you like the flavor it gives.

Jumping right into 90+ day dry aged beef if you've never had any before will likely just taste wrong/bad to you.

ALL beef is at least wet aged 21 days. If you got an absolutely fresh just of the freshly kill steer piece of meat you wouldn't like it, it would be really tough and have an iron rusty taste.

Dry aging was the norm up until the 1970's when the meat industry found that wet aged beef is easier to do there is less waste.
