You know I was convinced wine sommeliers were all full of complete shit with their flowery descriptions of wine until I got into specialty coffee. The thing that did it was when I ended up making a good Yirgacheffe that tasted like I’d put a couple smashed blueberries in it. It was amazing. I checked the bag to make sure it wasn’t actually a flavored coffee. That cup was sort of a fluke though. It wasn’t until getting a proper grinder that I could consistently make coffee that delicious again.

That said, those cunts who give tasting notes like “whispered poetry with a hint of moonlight in the finish” are gargantuan faggots deserving of embarrassing deaths.

Yeah I use a plastic v60 with James Hoffman's method. It's proven very consistent for me. I use a stagg ekg kettle and Kinu m47 grinder.

You don't need that fancy stuff, really you just need a gooseneck kettle, Timemore Slim, and practice. And good, fresh roasted coffee obviously.

I use 21g coffee to 350g water. I haven't done much playing around with ratios yet, but that's worked well so far.

Is dark roast coffee a scam? Is it just what roasters do to cover up bad beans, by making sure they all taste the same?
Every dark roast I've had has just tasted burnt to me, but that might just be coincidence because I don't buy it often. Like the darker end of medium is fine, but anything calling itself "dark" always gives me notes of cigarette ash.

I drink mostly dark roast and some certainly taste burnt but most don't.
Perhaps the method of making coffee also has an effect on how much there is burnt flavour. I make mostly with an espresso machine and sometimes with a moka pot. The moka pot tends to give more burnt flavour imo, especially if you cook it too fast. The moka pot also makes the taste more pungent, especially, again, if you cook too fast.

I strongly disagree with the first two posters and am pretty sure they do not have espresso setups. If you really want to do espresso at one point, you will want two grinders anyways and definitely not a hand grinder. Using an electric grinder for both is a pain in the ass because switching around is not easy and wastes a lot of beans, using a manual grinder is awful for the fine grind espresso requires since it takes a long time and effort. You will need 4-5 shots to dial in any new bag of coffee for espresso and you're gonna hate yourself if you do it with a hand grinder.

So, look at your budget and decide. You can get the Timemore now if you're cheap on money or the Comandante C40 if you want killer filter coffee and never ever have to upgrade. Then, when you really decide to get into espresso a few years from now on, buy a good electric grinder just for that. This way you also don't throw / gift away things since you have a use for everything.

Just brewed the Sidamo with v60. Pretty damn good. The smell was strong on the berry/citrus fruit so I was ready for acidity, but it's actually very low on that, smooth balanced cup. I expected the brew to suck because the new Hario filters I got were a lot slower than my old ones. But it turned out just fine, not sure I even want to change the grind but I'm gonna try anyways. Paradise roasters' moonbow decaf is good, sometimes something about it reminds me of like raisin oatmeal cookies. It doesn't straight up taste like that, but there's something toasty, sweet, and raisin-y about it.
I also like Compelling Coffee's decaf colombian. It's sweet and slightly fruity.
Fresh Roasted Coffee LLC sent us one batch of decafs that were decent enough to re-order, but the second batch were all WAY overroasted and about 2 weeks old so while they have a big selection, buyer beware.
HappyMug has a good decaf Sumatra that tastes like a decent Sumatra. Their Rainy Day Decaf just tastes like your standard "coffee" coffee if you're into that.

I never thought about sommeliers or whoever tastes coffee. But I love coffee since I was a Kid, but always drank commodity Coffee with milk and sugar. I started opting out the Milk like 8 Years ago and the Sugar maybe a year later.

In my childhood years we always had a dripper but quite soon bought a fully automatic coffee machine. I wanted to try many different Beans and bought a gargantuan amount of different commodity and sometimes speciality brands without actually going deeper into coffee. Since drinking black changed my palate quite alot I started to find really big differences in every cafe I have been to, I travel quite a bit and tend to go to a few cafes rated good in each city.

But that one day I drank an Americano in Frankfurt, it was labeled with "testes of Raspberry and vanilla cream".

I was literally laughing about that stupidly flowery description. I still bought it. Immediately upon holding the cup in my handy I was enveloped in a almost crazy degree of raspberry smell. It was literally like I had fresh Raspberry in my hands.

I slurped and the freshness, the light tangy sourness gripped me. It was one of the best coffees I had tasted until that day. I checked the roastery and visited them the same day, trying many more different coffees.

Now I own a comandante c40, an aeropress, V60 and Chemex. I believe I finally can dive into the coffee World after more than 25 Years of commodity coffee drinking. What a great time to explore all this.

It is common knowledge that roasting a coffee bean produces the "roasted" flavor. The darker a bean is roasted the less of the characteristics of the bean, its Origin, come into your cup.

So yes, the darkest roasts almost taste the same compared to lighter roast which emphasize the origin of the bean.

The place the coffee has been grown is one of if not the greatest factor in what taste profile it will present to you. The roaster should know about the individual profile and attune the darkness to it to emphasize the taste and let it shine.

Love it when my coffee comes in a teabag, still smells nicer than kurig coffee. Smells on the slightly darker side.

It's, funny, doesn't really smell like anything during the brew. Just a really faint smell of cheap coffee. But the machine is so damn loud

So strange. Before brewing, it had a fairly robust smell. But now it smells just faintly of coffee and tastes, barely like anything. Just a cheap generic dark coffee flavour. I get the slightest hints of leather on the nose and tobacco on the tongue.
I think I would have had a nicer time chewing on my wallet.

Sorry for the late answer, it's the Comandante C40 Rev. 2.

It's not SO tedious that I would recommend a machine grinder in every case. If you drink up to three cups a day or make coffee for 2-3 People maximum at the time it's okay. But lets say the boys come over every weekend and you have to make coffee for 6 People, an electrical Grinder sure would help a lot.

Got this Bodum Filter brewer as a Present, I also use James Hoffmanns V60 Method, makes great coffee.

I still prefer the Aeropress tastewise.

Cafe Llave is one of the few brick tier coffee I've brewed in my moka pot that didn't tasted like boring burnt. Its still pretty basic, bit isn't burnt tasting. Also if the brew comes out sour I find making a slit with a butter knife before brew stops that.

>> No.13557968

>>13557934
Interesting. What would the slit do exactly?

>> No.13558054

My guess is it allows the steam to come in abs wet the coffee from top to bottom verses having to rely on it coming up through the bottom to extract the coffee. Its only brick coffee I've run into where it has tendency to to under extract.

Anyone else think coffee smells slightly worse at every stage of the process? Freshly roasted beans smell delicious, I could smell them all day. Grind them, and it smells pretty good. Then pour hot water over them, and the actual coffee liquid smells...okay. Even when it tastes good. But if coffee tasted the way that the roasted beans smell I'd probably drink it by the pint.

>> No.13558346

>>13558061
I agree actually. The beans smell the nicest. Once ground, they smell like a much more intense version of the whole beans which isn't as nice. As for the smell of the final cup, I have found that varies quite a lot bean to bean. I have had some coffees that smell just like the beans when brewed and some that smell completely different.

Anon who ordered the Xeoleo Ghost burr grinder from last thread here. It arrived in only 6 days, pretty cool.

Brewed a couple times with it and wow. I don't think I can do the grinder justice. I will say say this: I used the wrong settings in my first two v60 brews and got a 2 min brew and a 4 min brew each, which you'd think would taste under/overextracted each. Nope. Both cups tasted great regardless, no acidity or bitterness whatsoever. Also no coffee grounds stuck to the filter walls at all, it becomes a flat bed like in all those brew demonstration youtube videos (my old grinder was bad with this). I think it's the sifter that does this mostly, though the grind size is very very uniform as well. It can't do espresso tier fine grind, but still produces a more than enough fine grind for things like aeropress. It grinds pretty fast and quiet, too. Honestly nothing but praise for it so far, if you want a filter grinder and don't wanna spend 2500 dollars on a EK43 Mahlkoenig, this is probably your best bet. At 130~ bucks (express shipping included) it is an absolute steal.

If you guys have any questions I will try to answer them. Done with brewing for the day but I will go for a 3:00 v60 brew tomorrow.

Very nice, Anon.

>>13561149
Not really... Kind of? They’re not standardized terms. Not even “light roast” or “dark roast” are standardized terms. One roaster’s medium will be another roaster’s “oh shit it’s ruined.” (Cough cough Starbucks cough.) They’re blends of coffee that sort of have the same general flavor profile.

They’ll be medium light, smooth acidity, and generally unassuming “classic coffees.” They should be generally the same style of coffee no matter which roaster blends it.
See what characteristics (origins, roast profile, tasting notes) are common across your favorite “donut shop” and “breakfast” blends so you can find more of what you like. (And less of what you don’t.)

>>13561159
In case you’re being serious, it’s because hot water and an appropriate grind do a much better job of extracting flavor and aroma molecules. It’s also a much more efficient use of coffee beans so you get more bang for your buck. Also light roasts can be pretty hard to chew.

Super dark roasts are roasted to the point where all you taste is char, so flavor wise, it doesn’t really matter if you brew or eat them. They’re also easy to chew so that’s why you’ll sometimes see them sold covered in chocolate. But if you like dark roasted coffee, or you get a well roasted dark roast, you’re still better off brewing it.
