I feel great eating chicken thighs and rice/ rice noodles with broth, the only problem is that I get bored of it and eat some nasty shit that fucks me up for a few days. What should I add to it to be interesting?

Buy a bag of frozen pepper and onion stir fry and some hot sauce (pic related) and toss them in the noodles

Salmon is another good light meat with some flavor like chicken thighs. Or you could bake chicken wings, or take some chicken breast and make shredded taco meat to put in a tortilla or something, maybe start buying whole chickens and breaking them down, bake the wings and season them with butter and hot sauce, or just roast them whole and eat with some vegetables

do a pan sear. don't need to add too much extra oil since you can render out the fat on the chicken thighs. don't even need to be worried about overcooking them cause thighs don't get dry and stringy even when going to like 180F.

Try making sauces to go with your chicken/rice combo. An orange duck sauce, an adobo sauce, a teriyaki sauce, plum sauce
