I honestly don't understand why you wouldn't be able to make cheese out of plant milks

I'm sure the ratio of protein to fat wouldn't be the same, but you could also supplement that, right?

I'm really interested in the idea of fermenting plant milk into tofu--but, things like almond milk

tofu is basically just cheese made from soymilk if you think about how both products are produced
I also want to know more about what specifically makes different cheeses different--obviously it's the bacteria/mold

But if I made a simple ricotta out of milk and lemon, would I be able to put that into a mold and turn it into a cheddar?
It wouldn't be traditional, but I'm American, so who gives a fuck about getting it traditional

Do you have to use rennet because it curdles in a specific way, or could I use "nigari"

There's a vegan cheese company local to me that makes really good stuff. Dude who started it was, if I remember correctly, an engineer who was lactose intolerant but wanted to eat cheese, so he spent a few years fiddling around with different curding and culturing techniques using cashew milk. The stuff is actually quite a good, and while it's not a 1:1 copy of cheese, it fits nicely into the same role.
