How do I get firm sunnyside up eggs? I tried throwing water in the hot oil I was cooking the egg in and letting steam cook the yolk, but it still comes out runny

Not really sure what kind of effect you’re trying to get. Do you want the yolk to be 100% solid? If so why don’t you cook them over easy? If you don’t know you fry the egg like sunny side up, but once it looks cooked you gently flip it and cook the yolk till it’s solid.

If you just want to firm up the top a bit, get a lid that will cover the pan. But a very small amount of water in the pan (avoid the egg) and put the lid on for a few minutes. That’ll cook the gooey white on top and from up the yolk.

But yea, slow, no butter, and cover, but you need to watch them if you cover them the yolks will white over.

I had a customer who wanted their eggs like this, sunny side but 'well done' it would take like fucking 15 minutes for it to fully cook and the yolk to be still yellow, which at the end of it's cooking wouldn't be really yellow anymore.

okay op egg cook from egg restaurant here i'm going to try and make this really simple because it is

the egg white has two consistencies, one which is like liquid and another that is contained in a membrane around the yolk. the one contained within the membrane takes longer to cook and is often still viscous and gross by the time your yolk is in danger of being overcooked. bro all you have to do is break that membrane. using your fingers or a fork or a spatula, just peel the fuckin goo sac from around the yolk before the white even sets. the liquid white will run out amd set with the rest of the white, and your yolk will sit on top naked and püre
