Probably charcoal. They are relatively cheap and most people have good quality charcoal lying around already. You do t just throw any wood into a smoker though. Different woods pair with different meats. Apple, cherry, hickory, pecan and oak are your typical smoking woods.

If you're just looking into smoking, a barrel smoker is the best to learn on, but they are basically only smokers.

If you're on the fence, and want to dabble in smoking, working with wood, and charcoal or pellets, get an offset, or pellet grill. This allows for you to dick around with smoke flavor, charcoal, wood, etc. and if you aren't into the smoking thing, you still have a fully functioning grill.

Plus, an offset smoker teaches you good heat control, and are relatively cheap.

look into Weber's Smokey Mountain. it's incredibly popular.

you could get him a pure wood-burning smoker (called offset or stickburner), but the cheaper brands are absolutely terrible. like it's seriously hard to find something decent for less than 500, and you'll want to go more towards 1000+. they are also large and heavy.

Weber Smokey Mountain seems like the obvious choice.

If someone is on the fence, there is no point on spending money on a vertical smoker, they aren't as good as an offset for everyday grilling.

My father asked for a smoker one year, but he only did it because he raved around mine over the years, but never actually went out to get his own (which speaks volumes) so we got him a offset, he rarely uses the smoker and just uses at as a grill 90% of the time.
