Almost no one from this country identifies as "Iranian" as a badge of citizenship or something, for some odd reason. It's Persian people, and Persian food, dude.

The only thing I know of that is exclusively Persian, is the practice of letting the butter in a bowl of rice settle down to the bottom, get overcooked, and form that flipped over butter crust at the table,

The rest of the usual cuisine in that area of the world crosses a lot of borders, cultures and I couldn't specifically say.

While I lived in DC near Courthouse, I frequented an Afghani restaurant which was utterly delicious. I had no idea what I was ordering, just pointed to the various chafing dishes choices served like a cafeteria, got a couple of mains, some kind of simmery eggplant veggie side always, one of the three or so pilafs of the day, and the amazing flatbread bread and "green sauce"(cilantro chutney) for it all.

Top for me is Lebanese and Isreali foods, best of the fresh ingredients combined with all the rest.
