CHILE CON CARNE IS REAL CHILI. EVERYTHING ELSE IS BULLSHIT. Do you know what chile con carne means? Chili peppers with meat. The primary ingredients and primary flavors are beef and chili peppers.

Here's how you make it: Soak a mix of whole dried chilies in water or broth. Add some chipotles en adobo. Optionally, add fresh chilies like jalapeño, serrano, etc. Blend the chilies and liquid into a paste. Cube some chuck roast, sear it, and set it aside. Cook some onion and garlic in some oil until they're translucent. Add some flour, and cook for a minute or two. Add beef, beef broth, and chili paste. Simmer until the beef is tender. Season to taste. I add a small can of El Pato hot tomato sauce, a pinch of cocoa and cinnamon, pepper vinegar, and whatever hot sauces I have lying around. I also use corn starch slurry to thicken if it's not thick enough. I serve it over rice, and garnish with kidney beans. It's delicious. It tastes like beef and chili peppers, as it should. The slow-cooked chuck has a much better taste and texture than ground mystery meat. The whole chilies have exponentially more flavor than some random chili powder. The seasoning just accentuates the flavor of the beef and chili peppers, instead of covering them up. If your chili tastes like cumin and tomatoes (like 90% of "chili") then it's bullshit. If it tastes like beef and chili peppers, then it's the real stuff.

A lot of people just have some poor sense of detecting flavors or trying to stick to the plan, and add things that go in other culture's "tomato pairings" such as cinnamon, bay leaves and borrow some italian spices like rosemary, basil, and such. I suppose it's possible that's how Mom made it. Their parents could have surreptitiously used available pantry items at home without going to the store, and that's how they ended up liking it.

My own mom insists on adding diced celery to chili. She likes the texture and flavor. Everything else is normal in her recipe, however. I have had a lifetime of travel, and I equally like texas style, chili con carne, even alternative chilies, and my own favorite at home recipe is my mom's basic chili con carne, which I brown better, and of course, minus the celery. If I'm cooking for family, who like varying degrees of hotness, I take out my dried chilies and fry up various sliced chilies in a small nonstick to use as one of the toppings. Ancho, california, guajillo and pasilla chilies all have their virtues, and a fried ring of dried chili topping every other spoonful is hot, sweet, spicy and fantastic.

Goddammit i already created a shitty thread about this.
You wanna start with a london broil roast in 1 inch cubes and a 6 pack of something dark and nutty. I used a chocolate porter but any stout or dark beer will do. Add a bottle and equal parts beef broth and cook on low-medium low for 4 hours covered adding salt pepper smoked paprika and ancho chili powder to taste. Once thats done put it to one side and fry up some bacon. Everyone has their favorite consistency so its your call how crispy you make it. Take the bacon out of the pan and set it aside. Next mince 5 cloves of garlic and dice 2 onions and sautee them in the bacon fat stirring regularly to prevent sticking and to ensure an even cook. Cut 2 large red peppers in half. Bruah them with olive oil and place in oven set to 375. Next add 2 large cans of crushed tomatoes to the beef and set on medium. Stir in 4 tablespoons of honey and half a cup of brown sugar. Mince the bacon and add to the mix of onions and garlic. Using a spatula scoop the mixture into the chili. Check the red peppers periodically and whem they are slightly black on the outside with significant skin separation take them out and place them in a bowl covered with plastic wrap. Next add between 1/2 to 2/3ds cup of heavy whipping cream to taste. At this point i added a little extra cayenne pepper and salt but that was a taste thing. Lastly mince up the red pepper after peeling the skin off (which should be easy thanks to the plastic wrap) and add to the chili. Cook on low for another hour

Saute onion, garlic, red bell pepper, habaneros in bacon fat
Deglaze with whiskey
Add stock
Add ground cumin, mustard, nutmeg, pepper, fennel seed, cinnemon, oregeno, thyme, salt, garlic powder, onion powder, paprika, and basil
Add tomato sauce
Add brown sugar
Add dark chocolate
Add another 400ml of whiskey
Add dried peppers
Simmer in a smoker for 4 hours covered and uncovered until greatly reduced

This comes out incredibly rich tasting.

Made chili last night and all though it turned out well, I really am regretting the fact that I didnt add a beer this time. Pretty basic but trusted
Semi-pepper base blended in a food processor:
2 habeneros
4 serranos
3-4 dried chipotle
Half cup beef stock
About 12-14oz of san marzanos tomatoes, would consider fire roasted
Blend that together until homogeneous

The rest:
2lb 80/20 beef, browned
1 onion, 4 to 5 cloves of garlic chopped. Cook in beef fat
Add the rest of beef stock (1 and a half cup)
Salt, pepper, cumin, cayenne, pinch of oregano, garlic and onion powder if youre feeling it.
Throw in the pepper and tomato blend
Add extra chopped peppers. Usually I add 1 more hab, and or 2 or 3 serranos.
Also for experimentation, worchestshire, coffee, 90% dark cocoa, and usually dark ale go here.
Simmer and thicken on low heat after bringing to a boil for about half an hour.
Throw in beans now, I like them to get added more towards the end so they dont get too mushy.

Different peppers usually are what I play around with. I just like habeneros and serranos a lot but other standards work. Also adding le brown sugar turns this into a very bbq style chili if thats your thing

-1 onion 1 celery 1 carrot cup of pancetta browned together
-Add in 1 pound of ground turkey brown meat
-Add spices in and coat meat with it creating fond on bottom of pan
-Add 1 beer of choice and simmer away scraping fond off bottom
-Once beer is mostly gone add chicken stock and simmer
-Add in bell pepper at end to give it a crunch and diced parsley at very end once liquid is mostly evaporated

For starters you want to cook in an enameled cast iron dutch oven if you have one. Its best if it gets to simmer for hours. Chili is more of an experiment every time you make it.
I usually use stew meat and I brown it in dutch oven so it makes a nice fond. After I brown the meat and cook the veggies then I pour a bit of beer into the pot and scrap off the bottom to get the flavor off the bottom. Its almost like real cooking. Stuff I use in my chili.
Canned crushed tomatoes
1 big onion
1-2 green bell peppers
maybe a pablano pepper
2-3 chipolte peppers without the seeds since the rest of my family can't handle anything spice. Get ta can of chipoltes and adobo sauce and pour some sauce in too.

1 bottle of beer
Chili powder
Smoked Paprika
Cumin powder
Oregeno

pepper

After stuff has simmered at least a couple of hours I toss in 3 handfulls of crushed tortilla chips to thicken it up and let it cook uncovered for at least 30 more minutes.
