I like Persian food when I have the opportunity to have it. A lot of different tastes I'm not used to having normally. Stuff with pomegranate and sumac. I hope we don't blow them up. Why can't Israel and KSA handle their own shit?

I made fesanjan once and wasn't crazy about it, the flavor profile is kind of alien

Baghali polo, dill rice with fava beans + lamb shank. Iranians use TONS of herbs and in huge quantities, like how other cuisines would use vegetables. It creates a really interesting and unique flavor profile

I don't know what is best, but I've got a lamb-and-rhubarb stew recipe from a Persian cookbook that is delicious and easy to make. (Or use mutton. It just takes longer to cook and is a bit more strongly meaty.)
