People wanted to feel like the fancy big dick, so a market grew up to exploit that. Over time it's mutated into an industry where the tipping has gone from big dick posturing to an expected part of the transaction so restaurateurs can not pay servers, which lets them keep costs down. Over time these lower costs became an accepted part of the industry, so consumers now demand the lower costs, so restaurants can't afford NOT to run like that.

But the fundamental desire people have to be the big dick remains, so once you remove that outlet for it (bullying cashiers and wagies), people will clamor to have in back in a generation or so.
