The powder does last for a long time, the thing with it is that it needs a lead time to make it into mustard, and you don't want to throw into some stew or soup because it'll clump up. Make a slurry then put it in.

I usually buy dijion (for smoked meat, fish and cheese) and creole (for salads, glazes and sauces), yellow's fine and I always have a bottle onhand, but I never seem to use it for anything. The more I think about it, though, I just really love mustard. It's a great condiment.
