Good ramen is undoubtedly one of my favorite foods and quite tasty when made properly. It is labor intensive and time consuming so I don't care to make the stock so I enjoy going out to places that make it.

It is a meme though that all the fuckin soibois come out in force, so I tend to avoid eating at the most popular places and find a smaller spot that I like. The right broth thickness and richness, with some good chewy noodles and a side of karaage or tempura is kino, I'd never wait more than 15-20 minutes to get some, and even then I'd probably just go get some udon or bun bo hue where I dont have to wait.

I live in Japan and there actually is a difference between good or bad ramen places.

Bad places have a more oily broth, rubbery meat, and sometimes the noodles are just flavorless and stiff. Good places have a clean broth, choice cuts of meat, and soft noodles. I seriously can't go back to the big chain place by my house after having good ramen.

That said, I'd never actually stand in line to get ramen someplace. That's just silly.

I make dashi stock by soaking shiitake mushrooms and konbu seaweed in water overnight. I add miso to it for miso ramen. You could also do some soy sauce and a dash of sesame oil instead of miso. You can easily sub chicken or beef broth, and then add miso, it's still real tasty.

For your choice of meat topping it's just whatever, chashu pork is pretty good (pork belly slow cooked in a sweet marinade) but yeah, steak or even baked chicken breast still works, just season it nicely. I personally like extra firm smoked tofu. Egg is really delicious as a topping, I love the marinated (ajitsuke tamago) eggs. Mushrooms are great too (I like enoki and shimeji). www.justonecookbook.com has a bunch of ramen recipes.

The real deal are Chinese DRY noodle dishes. They boil and drain the noodles then mix it into a nice sauce. Two examples are reganmian, where they use a sesame/peanut sauce and pickles; and dan dan mian where the sauce is ground pork and spices.Those dishes are way better than any noodle soup Japan or China has to offer because they don't rely on MSG. Although they do often contain MSG.
