Generally, the rest of the west IE those of us from Europe still eat organs. I grew up with them. I'm not a fan. In fact, I borderline fucking hate them. Even so, I occasionally get pangs for a bit of liver or kidney, despite my general aversion. The only organ I'll eat happily is liver but only if made into a paste and only if from chicken, duck/goose or pork, made with plenty of fat from its source animal and a good deal of caramelised onion.

Because we grew immensely wealthy and can eat steaks, roasts, and chops regularly.

When I buy a whole chicken and cut it up to fry I always take the livers out of the little bag and fry them up. I liked them so much I went to the market and bought a full pound of chicken liver to fry up by themselves.

I work at a butchers and honestly we sell maybe 60-70 a week of each, about on par to cuts of beef (we're not too big of a butcher shop). its not that people don't eat it, its just its been left out of becoming processed packaged food 99% of the time so people just generally don't go out of their way to buy it.

What are some good liver recipes?

Floury liver is very simple and very delicious and smooth.
All you need is flour, black pepper and salt, dip it in shake off the residue and fry it real quick.
It goes very well with beer, red wine and/ or basically anything.

Used to live near an ethnic butcher's that had chickenhearts for practically nothing. That was good times.
People seem to be catching on to at least hearts as a good cheap cut here. A pigsheart is almost two dollars now. Pretty sure ground beef is cheaper by weight.
Heart, liver, and kidney are all excellent stew or meatpie meats. I think a lot of people start out with fried liver and don't like it because the flavour is so strong. Stewing it or using it in sausage or meatloaf is a much milder introduction to it.
