I just bought these on a whim assuming I could pan fry them but apparently I can't? How do I cook this shit as quickly as possible

Brown them in a Dutch oven, remove
Add in a chopped onion and some butter, garlic, cook
Deglaze with some red wine, beef broth
Add some chopped tomatoes, rosemary sprigs if available
Cook with the lid on for three hours or until very tender
Eat with mashed potatoes and the now reduced sauce

That's a braising cut, man.
You score them all the way around the edge so they don't curl up, then toss them in flour.
Brown them and braised them in stock or wine. With herbs, spices, and vegetables of your choice.
I think osso buco traditionally has tomato or tomato paste in it but I'm not so crazy about that. It's up to you.
