i used to think meatloaf sucked to because my mom would literally just open a pack of ground beef and bake it till it chard, but when my grandma died we went to GA for the funeral and the neighbor (decedent of Daniel Boone ) brought over a condolence meatloaf (apparently a thing in GA) and it was so good, apparently there supposed to be egg, bread crumb and a assortment of spices in it which really make it a lot better. Just my opinion though

Egg and breadcrumb to start. From there, salt and pepper to taste. Lean Purrins adds good flavour and acidity. Consider spices like garlic (minced, but powdered is fine), onions (finely chopped, or dried minced), paprika or cayenne, ground celery seed (careful, as this can get bitter fast), and ground mustard. All to taste, and only use the spices you like. Consider rosemary, savory. and tarragon for herbs.
Holy shit, though. Don't go and use all of those at once and come back to tell me it tasted like crap. Start out relatively plain and find out what you like. My mother liked to put those dried vegetable flakes in her meatloaf, which changes up the texture, but I never felt strongly about it either way. Bake to temp, slather in your choice of sauce, broil a little, and you've got a nice meatloaf.
