I remember Hickory Farms shops at the mall with cute girls passing out cubes of meat and cheese.
It was OK but overpriced and comes in shitloads of packaging.

Ha...just placed my SC order last week. I always get the trio 1 lb. logs of Summer Sausage, Garlic Summer Sausage and Beef Log, no other sausage compares. Im a Summer Sausage kind of person, but the Jalapeno Beef Log is great too.

Love the free tin of chocolates. Their cheese over the years have become forgettable with the exception of the Kreme Kaese, but the meat and chocolate are devine!

The old Hickory farms were more focused on the cheeses(looks like they were always processed and blended, but you got alot of it) and the beef stick(now summer sausage).
The inclusion of turkey sausages is a serious downgrade in quality.
I bet current Hickory Farms doesn't even include those strawberry hard candies with the soft centers any more.

chef john made a recipe. it's stupid easy, i make one fairly often. mine never look as good as his though. my guess is because i use pork and i don't have curing salt and i'm not so good at making it round, it always has a flat bottom. here it is in slices

Pretty tightly packed for not stuffing in a sausage casing. That can be difficult. Btw, curing salt (Cure#1) can be bought on-line or at a large sporting goods store like Bass Pro or Sportsman's Warehouse. It adds a subtle flavor that's worth it for summer sausage style sausages.

Get her on video or copy the recipe cards down now. These things might matter to you in 10 years and you might not be able to figure out that 1 secret ingredient not written down just cause, or some secret method. My grandmother used to partially freeze and chill the cream cheese layer in a 2 layer pie I tried to make. Maid told me the secret, phew, or I wouldn't have ever known.
