Anybody have any experience or thoughts on this brand? Specifically, their daimyo series? My girlfriend picked up one of their vegetable cleavers while it was on sale a few days ago, and I'm pretty impressed with it. Pattern is nice, fit and finish seems excellent, and it does actually seem to be VG10 like they claim. Plus, it came sharp as hell from the factory. It seems like a incredible deal for $100. If the chef knife is as nice as this cleaver, then I think I might actually prefer it over my shun.

The thing is though, I can't find any real information on them beyond their website and amazon reviews. They seem like some literallywho, so it feels like there has to be some catch and this knife isn't actually as nice as it seems to be--sets off alarm bells, y'know? Anyone bought or used one of them? Thoughts?

My dad got me that exact knife last christmas. I absolutely love it, I think it's great.
It's an awesome all round tool in the kitchen, and it's easy to wetstone as well.

I just whetstoned it last week. Took 20 minutes and it was as good as new. I don't care really, I think it's a great knife and I've enjoyed the fuck out of it

That's quite a long time sharpening. Softer steels can be sharpened in a few minutes. I'm not saying this is a bad thing, VG10 is a good steel, it just takes a while to sharpen.

Soft steels may be easier to grind but you still have to spend a lot of time on it since they dull quickly. Just get diamond stones if you want to spend less time. They're not even expensive either.

What matters most is that it's comfortable in your hand. If it's sharp and stays sharp for a long time between sharpening, that's a plus.

Don't listen to the cunts in this thread. There are plenty of Chinese manufacturers who make very good quality knives now. Sure, the absolute very best $500+ knives are all still made in Japan, but in your price range, there are many Chinese companies delivering very good values, and by what you wrote, it seems that you picked one of the better ones from China.

Look up the Venev stones on Gritomatic. If you just need about 1000 grit then any of the generic brands of diamond plates on Amazon work just fine.
