How do Brits eat their fish and chips? I'm trying to make authentic British fish and chips. What kind of fish do they use? Do they typically use wedge fries or regular fries? What kind of sauce/condiments should I use? What drink is often paired with fish and chips?

I'm American, but I use salted and peppered wedge fries, parmesan encrusted Tilapia, ketchup on the side, and a cold blonde beer.

most whitefish work perfectly fine, just get whatever is cheap and local.

The most important part is what beer you use for your batter and how thick it ends up being. Personally, I think sam adam is the best, but some people might want something a bit more hoppy.

brits and old people use malt vinegar, but to me that doesnt taste like anything other than water, so if you have to add anything to the dish, i'd say tartar and/or lemon if that's your thing

What kind of malt vinegar have you been trying? It should be distinctly vinegary. It's not as strong as apple cider vinegar, but you for dipping you want something that won't overpower the food you're eating. That said, I've used apple cider vinegar when I didn't have malt and didn't mind the tang.

I use this recipe for the batter and it comes out excellent. Let the fish rest for a bit on a rack after battering it. I generally use cod just because it's always available here.

Because back in the day (less so now, esp with new dishes like curry) fish and chips were cheap and filling. People tend to like what they're used to and so the rest is history. I don't tend to buy fish and chips these days because for the price there are better things to buy and it's surprisingly difficult to find good ones.
