Why is deli turkey so much better than the kind you get from cooking a turkey yourself?
The latter's always dry and takes forever to chew and doesn't taste good. Thanksgiving was my least favorite holiday growing up for that reason. But then I discovered deli meat after getting out of school and living on my own and I've been eating it all the time in the ten years since then (also I never get together with my family for holidays, so that was an improvement too).

Place a single cut between the two knots of meat that should be obvious when the spine is gone

Flip that bitch and press it flat until you hear the pop.

Gently work your fingers under the skin and separate the skin from the meat

Combine room temp butter with coarse salt, black pepper, and FRESH chopped parsley.

Mash that shit all the fuck over under the skin and also coat the skin in a layer of herby goodness.

350F (fuck metric shit stains, figure it out) for as long as recommended for your bird. Usually a 15 pound bird cooks in 1.5 hours or less.

Check your skin about an hour in and cover with foil if it's getting too dark.

Let rest for at least 20-30 minutes while you take accumulated juices and make a fucking gravy with the giblets you put a sear on and cut up the liver and then make a paste from it to add to the broth and drippings. Add a can of gravy if you can't figure out how to make it thicker on your own, which you can't, you fucking heathens.

There's no reason to overcook turkey. You just need to pay attention to the fact that the breast will be cooked long before the leg and the thigh area. So you need to do something to lower the heat in the breast area. Try butter and combinations of anything with moisture, like finely sliced mushrooms, apples, onions. Also, keep the bird breast side down for about one third of the cooking time and then flip it breast side up to get a good colour. You generally stick to a lower temp the greater the thickness of the meat so the outside won't become dry before the inside is cooked. The final flavour will depend on the quality of the bird, but turkey is never going to taste as strongly savoury and succulent as beef. Still, once a year it's nice to do something different.
