You can substitute the heavy cream with a 1:1 mix of half and half and milk if you need it healthier.

Easy Tortellini Soup with Sausage and Fennel

Ingredients:

1 onion
1 fennel bulb with stems and fronds
4 Yukon gold potatoes
5 carrots
1 tablespoon cooking oil
1 pound loose hot or sweet Italian sausage
8 cups chicken stock
1 14.5-ounce can diced tomatoes (fire roasted, preferred)
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon dry thyme
Crushed red pepper to taste
Salt and pepper to taste
½ cup heavy cream
12 ounces fresh tortellini
Extra virgin olive oil, optional, for serving

Directions:

Prepare Ingredients: Peel and dice the onion. Cut the core from a fennel bulb and discard. Slice the bulb into thin wedges. Dice the stalks.

Reserve fronds. Peel and dice the carrots. Peel Yukon gold potatoes and cut into medium cubes.

Prepare the Soup: Heat 1 tablespoon oil in a soup pot. Add onions and cook for 5 minutes or until beginning to soften. Add fennel bulb wedges and diced stalks along with the diced carrots and cook for 5 more minutes until beginning to soften.

Crumble the loose sausage into the pot and cook, stirring regularly, for 10-12 minutes until well browned and cooked through. Add the potatoes. Season everything with salt and pepper.

Pour in the chicken stock and the can of diced tomatoes. Bring to a boil. Season with garlic powder, paprika, crushed red pepper, dry thyme. Simmer for 20-30 minutes until the potatoes are fork tender.

Prepare Cream Base: Scoop out 1 cup of the soup liquid and add 1/2 cup heavy cream. Stir until combined. Set aside.

Cook the Tortellini: Bring the soup back to a boil. Add tortellini and cook until al dente, about 5-6 minutes. Turn off the heat and stir in the heavy cream mixture. Taste and season to your preferences.

To Serve: Ladle the soup between bowls and sprinkle the fennel fronds on top. Drizzle with a touch of extra virgin olive oil if desired. Enjoy!

Left over thanks given potpie.
Brown off some gnocchi.
Fry together some carrots, onions, and celery.
Deglaze with some vinegar.
Stir in leftover turkey dark meat and the dumplings.
Add leftover gravy. Add in some heavy cream.
Stir in some flour if needed. Season it up with whatever you want.
Throw in a ramekin and cover with biscuit dough and bake until browned.
Like 30 min of effort and so for something great.

I chose mainly legs and hips and avoided anything in the spine as the deer in my area have had Chronic Wasting Disease pop up before. This is important, make sure that you don't have any diseases in your area that ruin all or any of the bones - if you are uncertain don't use it.
I left as much gristle and connective tissue on them as I could and roasted them at 450F for about 20 or so minutes until fully browned and starting to render the fat that was left on them.
I fried off some chunked carrots, celery, and onion until they were just barely not browned.
Added a halved bulb of garlic per pot and several sprigs of thyme, rosemary, and sage and sweated that.
Broke the bones to expose the marrow and to better fit them in the pots, covered with cold water and boiled them for 4 hours topping off with a small amount of water occasionally to combat evaporation.
After straining it produced a grey, cloudy stock with a ton of gelatin in it. Some fat was pulled out as it cooled and collected at the top, I left it to help keep oxygen away from the stock. Its is richly flavored but neutral enough that it isn't only good for specific dishes.

Can't really get bison or elk bones easily in NYS so I've never tried either.
I'd imagine that the bison or the elk would be better than venison due to the increased size of both and the possibly better taste of the meat depending on your preferences. But you'd have to give those larger bones a few more hours to really get everything out of them.
I should have boiled my own bones for longer, but I was low on time. If I was to do it again I would have went for closer to 6 hours. So for the bison or elk I'd put 6 hours minimum and 8-10 the reasonable goal.

Venison is far leaner than pretty much any beef. An average piece of venison is only slightly fattier than a filet mignon.
This does translate over to the bones. Venison broth while containing some fat is far less fatty than a beef broth. However there is still a moderate amount after boiling.
I tend to just keep mine on the top of the liquid for storage because I like to imagine it preserves it or something - like it acts as a seal like a confit or wax seal does, but it probably does nothing. I go through broth decently quickly making sauces and stews.
Before using it I do get rid of most of the excess fat just to keep it from overloading whatever I'm putting it in.
For the fat in specific on its own, because venison fat doesn't really taste good like bacon or duck or even beef fat does I don't really use it on its own of anything. Its not bad like chicken fat can be, just bland. Its okay but there just isn't a really a point to keeping it around.

Stuck a big hunk of pot roast in the slow cooker with a can of tomatoes, two onions, a large russet and a large sweet potato, about a pound each of carrots and celery, threw some water in there.
Waited some hours, it was too fatty so I threw potato flakes in to absorb the fat and thicken everything. Put some mushrooms in it a half hour before eating it.
5/10 I should have browned the beef first but I was feeling lazy.

Okonomiyaki!

Preheat cast-iron skillet on medium heat

1/2 cup flour
1tsp baking soda
Salt, pepper, mirin, chili flakes, MSG
Water until batter is just runny, not thick/lumpy
2 eggs
2 cups chopped nappa cabbage

Mix it all together in a bowl

Add plenty of canola oil to cast-iron skillet before pouring batter

Flip several times until fully browned on both sides

Add sauce (ketchup/soy sauce mix) to the top after final flip, no need to remove from skillet. Add mayo in a spiral pattern, and drag chopstick from center outwards in all directions to make a spider's web design
