Nobody cares what you want when it's food like that. They get way more people desperately trying to be their customers than they would ever actually want to deal with. There is no incentive to making the customer experience good in that scenario. Trying to give people a great environment and customer service is something restaurants needing money and customer loyalty to survive do.
It's kind of like the difference between someone making a TV show or movie because they're trying really hard to win over audiences and get paid lots of money vs. someone more like David Lynch who clearly only makes what he wants to make for his own artistic interests and who cares as little as possible about how you feel about that.
When you're good enough at what you do and everyone recognizes you already you're freed up to engage in craft for craft's sake and not as a customer service prostitute begging people to give you money.
Money charged in this case is primarily meant to help discourage would be customers because they have too many as it is. It's not like money charged at a more typical restaurant where they're needing it to stay in business.
