You clearly are having a hard time grasping that these terms aren't in reference to their literal, current geographical locations. For the first century or more of the American nation's existence, settlement was mostly confined to the Eastern coast. This is the Southeast of the current United States, but back then, when almost everyone lived in a relatively narrow band along the Atlantic seaboard, that was just 'the South'. These were the states that developed the distinct 'Dixie' or Southern culture. Texas was settled later and by different people living differently than the Old South, so when talking about American practices, it is very much a separate entity to the Old South. You'll find a similar distinction between the South in general and the "Deep South".

East Texas is pretty southern. Dallas is just a dystopian urban shithole, as are Houston and the other big cities. West Texas is part of the southwest, panhandle is midwestern, gulf coast is like florida's tampa bay area. Whole state of TX is too many nogs and beaners. Not a great state but it is huge.
