I also rinse of pork, especially if it has cut bones to remove the bone shards.

Rinsing it makes chicken, pork, or fish easier to handle since they tend to be slimy and slippery.

the liquids that come from a frozen bird make me weary.
i generally wash that layer of stuff off and pat them dry so i can prepare them to get the kind of color and crispness on the skin that i like.
if i'm going to spatchcock the thing, nah. i just cut the fucking backbone out and prep it up because i'm able to blot off more of the liquid without it running back around to the bottom each time i turn it or lay it down.
