The dark meat piece is always still pink inside. Like it doesn't transfer heat as well as the white part. Why??

closer to the bone but also pink color does not always mean raw, it means a higher concentration of myoglobin/hemoglobin and the only way to be sure you are safe is to actually read the temperature of your meat with a cheap thermometer
