I've gone full MAMA ramen and haven't looked back. I live in an asian neighborhood and have access to Taiwanese/Japanese pork-trotter Ramen, I also have access to Chinese-Xian hand pulled noodles (La-Mian), which is way better than the derivative Ramen.

I don't know if this counts as ramen, but I found it in the ramen section of H-Mart. It tastes like chili peppers and that's it. Very generous amount of veggies, but they are pretty bland and the chili taste covers up any taste they had. It has very thin rice noodles.

Lunch was pic related. Good amount of heat, enough to be hot but not so much that you can't drink it. Noodles are typical Maruchan bowl/cup noodles. The "beef" pieces are probably mushroom chunks, definitely not beef. Could definitely use an egg or maybe some onions. Pales in comparison to Maruchan's miso udon cups, but still decent.

Made my own broth the other day
>whole onion, diced
>little over half a bulb of garlic, peeled and crushed
>maybe a cup and a half of lard, fry up the onions and garlic
>added some fresh grated ginger
>put in some sliced up thin pork
>cook a while, then add brown sugar and soy sauce
>add more ginger
>once it's pretty thickly glazed add 2 cups of water
>add rice wine vinegar and toasted sesame oil after turning off the heat
>boil some packs of shitty maruchan in it

Unless it's something weird I mostly just add whatever I have sitting around. I almost always have onions and mushrooms so that's pretty standard but also stuff like chopped greens, cabbage, julienned zucchini, asparagus, whatever you want man. Mushrooms, bean sprouts and bok choy are traditional and always work. Anything that keeps its shape in the hot broth and won't seep into the flavor more than the flavor of the broth seeps into it should work, though ideally you'd use something that goes well with the flavor and whatever meat you might be using.
