I'm pretty sure it's the sauce / spread.
I take sandwiches to work every day (not very cold by lunch), and have been experimenting every week and have not been able to do better than sandwich shops even with much better ingredients.

A part of that is the limitations of buying for the week and prepping in the morning. Rolls are better than sliced bread, but only last a couple of days. Also toppings that add moisture (tomato, cucumber, pickled anything) end up making your sandwich soggy.

But mostly it's the sauce. Mayonnaise type sauces are bland. I don't like mustard. Sweeter stuff works well (ketchup, hot sauce, honey mixes) but I find it to be a bit much. Chutneys and relishes haven't been too bad. Vinegar/lemon juice added to the salad (or for that matter any dressing) adds too much moisture but sort of works. Perhaps there's some sweet / acidic / something amalgamation to be had, but I haven't managed to find it.
Subway has a nice sweet onion sauce, I wonder how they do it. It tastes much cheaper that any onion relish I have tried, yet works so much better.

After I give up on sauces I'll try for cold marinated chicken, which should have some flavour kick without the moisture. Not sure how I feel about cold chicken though.
