Made myself an egg and cheese toastie.

Truth is, the steam still comes out and sogs up the outer crust of things.

that's a problem with the amount of fat/oil and wet ingredients versus the amount of flour. cooling racks have done nothing but perfect a good, crisp cookie, if user error screws up the ratio that's on you.
