Rice, spinach, onion, parmesan, butter and veg stock make riso con crema di spinaci, a risotto-like dish from southern Italy. Costs about $1.63US per meal or, if you're one of those people who believe meat must be at every meal, $1.07 per side-dish-sized serving. Have it with a pan-fried boneless/skinless chicken thigh and you actually /save a little money/ because BSCT costs like $1.99/lb so a quarter-pound-sized serving would only up your price tag by 50¢, plus a penny or two for seasoning.
Other nice meat-based sides would be Italian sausage, pork meatballs, roast pork, roast chicken, cutlets etc

I can't suggest anything low-carb. I always overeat when I don't have adequate carbs with a meal. It's like carbs help curb my appetite and without them, I just turn ravenous and eat Amerisized portions of meat. If I tried to do low-carb seriously, I fear I'd wind up looking like Simply Sarah.

Yeah, I need a bit of everything or I don't feel satisfied. I consciously try to increase my portion of veggies vs simple carbs (like rice or potato or bread). and I try to go for whole grain when I can. Not a fan of whole grain rice, but I fucking love barley, for example, so I try to operate based on that.
