Burn its skin using a either a torch, broiler, or just putting it in direct gas flame until blisters come up
Remove the burnt skin and butterfly it
Dip it on egg seasoned with salt, pepper, and herbs or spices of your choice
Fry it over a shallow pan, add the egg mixture if you feel like it needs more.
Serve with salad/pickles vegetables of your choice
If you're lazy enough to not bother with other vegetables, ketchup would work just fine

Normally eaten with rice, but it's really up to you. Mashed potatoes might work.

you can make eggplant parm without breading it, only searing the slices (that you'd have to cut a lil bit on the thick side) with salt and pepper, and then just building it and putting it in the oven. I have made it this way and it comes out pretty good.
