Cast Iron is nothing more than a novelty people are trying to make 'cool' again for little reason beyond nostalgia. Like I said beyond being able to make a nice pan pizza without getting a different pan there isn't much to cast iron that something else doesn't do better.

Even the non-stick is better done with carbon steel. But stainless is the best cooking surface for almost every dish.

Fake. There are two typ s of nonstick, PTFE and anodized aluminum. These are probably anodized aluminum, which are a worse nonstick surface than PTFE.

Going down to even worse nonstick, there's seasoned steel or cast iron. Below that is plain stainless steel, ceramic, and other non-nonstick surfaces.

Any kind of harsh acid will damage the seasoning in a Cast Iron. Tomatoes, most vinegar and wine, and any other acidic ingredient can cause a large amount of damage to the seasoning and give the food an off taste when doing so. You can get away with a quick sauce or deglaze, but any extended simmer or boil will strip it down to the base layer.
Thats why those enameled dutch ovens and the like exist, for people that want a cast iron pot - which is a sensible choice unlike the pan - and plan to make something acidic in it.
