Recently tried Finnish Karelian pasty. They are cheap and easy to make. Make a rye dough roll it thin, fill with rice and milk porridge with or without cheese and fold the edges in. Bake, dip in butter and serve with chopped hard boiled eggs mixed 50/50 with butter.

You can use whatever you have. The porridge is mildly sweet from the lactose in the milk so if you want it sweeter and creamier use cream cheese, ricotta or mozzarella. If you want it more savory use feta or some other sharp, salty dry cheese. I think adding feta with sauted chopped spinach/onion and nutmeg would be good, it would give it a Greek flavor like spanokopita.

Nice to see non-finns try this. It's cheap and easy to make and delicious. It's also nice because you can reheat them easily in the microwave so you can eat them quickly during breakfast or bringing them to work :)
I have never tried any with cheese in them though

I know wheat flour might make it tastier, but would it be that bad if they were all-rye?

I remember eating these when I was in kindergarten but along with rice and cheese they also had some grated carrot in them. Is carrot something you guys put in those things? I used to love them but never really knew what they are called thanks OP

If you make them without cheese you can just mix some cheese with the butter and egg instead. Cottage cheese works well in my experience.
