I'm not sure what your point is. Most foods are meant to be eaten immedietely after cooking for optimum flavor and texture. Soufflees collapse. Sugary foods gather moisture from the air and get sticky. Fried foods lose their texture.

There's nothing "self defeating" about Sesame chicken; it's a crispy food with a sticky sauce. A long shelf life is not its goal.

Just like carbonara gets dry if not eaten soon after cooking, you don't get it at a buffet or takeout. You order it from the menu and they make it fresh for you.

I've looked into this extensively.

After cooking the dish to be covered in a sauce, if it's a battered meat, they leave it for a little bit after it has come out of the fryer. This somehow helps with avoiding the batter becoming not crispy.

They also use a mix of flours when making the batter and will likely include a significant proportion of cornflour, and possibly potato starch too.
