any suggestions on what i could fill pierogi with? wanting to try something without potatoes, so far only came up with sauteé mushrooms and swiss or chicken basil parm. don't want to use ham, can't think of anything to use with seafood like shrimp or white fish

mushrooms, cabbage, farmers cheese, you can do blueberry but i dont really enjoy sweet pierogi. I've also made some with a ground pork mixture

Most of the time in Polish cooking buckwheat refers to the dry-roasted grains. It's more assertive than most grains, kind of a dark, nutty, smoky, slightly bitter flavor - think well-toasted bread. It's strong enough to stand up to something like a heavy stew or a mound of sauerkraut.

Quark is a traditional filling, but you might get interesting results with ricotta instead. Actually, ricotta/mascarpone+berries sounds pretty amazing - regular quark is a bit too sour for that pairing to work.

Also, pirogi filled with corned beef hash would probably be pretty good. I've had omelettes with corned beef hash and they were great but I can't get them anywhere hereabouts (north metro Detroit 'burbs).

Fruit filled or "desert pierogi" are another common filling, blueberry being my favorite.

When I was a kid, we had a plum tree in the back yard (as well as two black cherry, a golden delicious apple and a sour cherry tree) and my mom would make plum pierogi but for some reason, only girls seem to like them.

1) Ruskie - the classic potato, butter and cream
2) Z Kapustą i Grzybami - a sauerkraut and mushroom filling, usually served with crispy lardons
