similarly, the yellow in real cheese is caused by bacteria changing chemicals already in the cheese.

cheeses are incredible, like fungi, they show us how diverse strange new and cool our world can be and taste.

I AM moderately lactose intolerant. I think a bit of cheese is actually totally fine for me though, I never got sick from a few slices of pizza, some cheese in a burrito, or a tiny sprinkle in an omelette, etc.

Milk doesnt sit well with me though. Does anyone have a scientific explanation for this?

Well there is a good reason for that. A cheddar made from high quality milk from grass fed cows will have an off-white color. Like a very light yellow or beige. So many cheese makers would use annatto to give their cheese that color. Then eventually it turned into straight up coloring the cheese orange, and now orange is just synonymous with cheddar. But high quality cheese makers will still often leave the cheese it's natural color because thats traditional. So an orange cheese isn't necessary a sign of a poor quality cheese but a naturally colored cheese is almost always a sign of a high quality one.
