i'd recommend to use well packed brown sugar instead of white sugar, stays moist
otherwise you'd need to add some molasses
brown sugar, egg, peanut butter

some people do just eggs and peanut butter but those people are what I like to call fucking awful people
they're as bad as people who make raisin oatmeal and put them in the same jar as the chocolate chip oatmeal

In every situation I use white sugar and molasses. I can get a peanut butter cookie that's dry and strongly peanut butter flavored or I can get the consistency I want but they don't really taste like peanut butter.
So the only recipe I ever make is chocolate stuffed peanut butter.

Which peanut better do you use? the 3 ingredient recipes tend to be a bit pickier on brand
we always use regular kraft in the green jar
a lot of other peanut butters aren't that great for baking, oil separation is barely if ever a thing with it
too much molasses could be achieving the consistency you want without the proper flavour
white sugar tends to melt outwards which is good if you want something thin and crisp but not something desirable in a peanut butter cookie so you could be losing a lot of moisture just because of that

I really do recommend brown sugar for chewy and moist cookies, the only problem is if they're overbaked the outside can be hard like an eggshell
