It's like adding any small spices or flavours to maximize other flavours.
You can add fish sauce, anchovies, cayenne pepper, paprika, soy sauce, a tiny splash of wine or anything else is very small amounts that make the main part taste more like it self.
Like meat sauces taste meatier when you add a splash of fish sauce or anchovie to it but if add to much it goes from meaty to meaty/fishy mess that doesn't taste good.
Salt is the same you don't want to taste only salt.
