They're trying to use bugs to replace meat, not plant crops. That's why they label how much protein it has. Though I'm not sure why they wouldn't just use some kind of vegetable protein for that instead.

It's probably just people who think they can exploit those who are concerned about the environment for a quick buck. I would imagine the NWO is smart enough to realize that the majority of people would never accept switching from livestock to bugs.
