I'm thinking of making some chilli for the first time, and I don't want to risk getting some shitty recipe from Tasty or GoodEats (ironic I'm saying this on a Vietnamese basket-weaving forum, I know). Do any of you Burgers have a good recipe I could use?

Literally, its all about getting deep flavors. Make sure your meat gets nicely caramelized whether you're using ground beef or stew meat. Use canned beans since they're nice and cheap. Use stock and a nice cheap beer for your liquid for max flavor. Some minced garlic and diced onion in the fond from your beef. That all equals Big flavor. Seasonings should be something along the lines of salt, pepper, cumin, smoked paprika, cayenne, and maybe a little bit of brown sugar if you swing that way. I personally like to use a little extra beef base.

Seems kinda like a Tex-Mex kinda chili. I like going with ...
dried cayenne peppers
bourbon
some cleaned-out habanero peppers (about 4 per gallon should do it)
lots of top sirloin beef tenderized and then cubed
salt
black pepper
water
4 stewed and peeled tomatoes
tomato paste
Sometimes sundried tamato instead of stewed

I'm not putting measurements because I tend to change the amounts of different ingredients depending on how I want the flavor to be. Spicier, sweeter, meatier or more drunken? Mix and match until you get exactly what you're looking for. Write down what you do as you go, and soon enough you'll have a custom signature chili.

The poor man's chili recipe:

2 cans of chili w/ beans (Brandwise, I like Hormel)
2 cans of chili w/o beans
1 can of kidney beans, not drained
1 can of stewed tomatoes, not drained
A pound of 80/20 ground beef, browned and drained
One whole onion, sliced and diced. You can throw them in as is, but I like to at least sweat them till translucent in the pan.
1/2 cup of beef broth
A packet of chili seasoning
1 teaspoon of cumin
1 teaspoon of paprika
2 cloves of garlic, minced
1 tablespoon of chili powder
Salt and Pepper to taste
A pinch of cayenne


Throw all of that shit into a slow cooker, set it to low and forget about it for eight hours.
