Bong used to work in a gastro. For fish use cod or similar. For batter mix equal parts beer and soda water, season, and pinch of turmeric for coloring. Slowly add flour whilst whisking to get the correct batter consistency. Then blanch the batter covered cod in a frier till golden, season with rock salt

For chips triple cook them in oil. You start by cooking them in oil until the centre isn't raw. You then submerge them in oil for like a minute at a time to get them crispy. The method being the residue oil on the chip will continue to cook the outside even when out of the frier, will require trial and error. Use vegetable oil, serve with a wedge of lemon, tartar sauce and mushy pea

Beef tallow is amazing for fried fish and potatoes.

For the chips, i always boil the cuts of potato until its about to fall apart, let it drain and then chill for a few hours.

Cooking it thouroughly and having them fully penetrated with water is great, it evaporates very quickly in the hot oil. It makes a crisp outside and fluffy inside.
