True, but we aren't very good at chewing uncooked fat. Most carnivores don't even chew at all and just swallow pieces they rip off.

It's best to cook the fat until it's rendered, and gotten crispy or soft enough to actually chew. You can also collect the drippings in some way, it doesn't necessarily have to go to waste. Or just cook it in a pot like a stew.
