I've smoked a lot of pork butts, both bone in and boneless. The boneless have a big empty cavity where the bone used to be. This can be a problem when you are only cooking around 180°. What I typically do is make some cuts in the fat on the sides of the hole, and then try to lay the flaps of meat out flat, cooking fat cap side up. You won't get it perfectly flat, but it does help reducing the size of that meat hole.

Wait until you can see the brown creeping up to flip, you only want to flip burgers 3 times total in my opinion. Press onions into the patty, flip and let cook for 2-ish minutes.

Also keep the burger moving if you're on electric stove, should be enough fat with 80/20 to not need oil.

Press them in and flip them so they cook into the patty or drag them into the beef fat and let them cook then put them on, then add cheese to the top over them.

The third flip is 50/50 letting the insides cook and cooking the onions on the outside using them to keep the outside of the patty from burning cooking too much.

I fucking love making butternut squash soup and that looks delicious. How do you do it? Usually I toss the cubed squash (little under 1" cubes) in olive oil, salt, pepper and oregano with a few garlic cloves. Then I bake that so the edges of the squash caramelize a bit, let it cool, toss it into a blender with a bit of chicken stock and puree that shit. When that's done, I simmer that all in a pot with a large stick of cinnamon and a little fresh clove. Season with salt and pepper to taste and then finish with a little bit of whole milk or heavy cream.

Pretty good. The chops were smoked from the locker, I usually never get them and a family member insisted I try them. I actually forgot I even had a pack in the freezer until I started making room. i’ve decided to do something nice for my immediate family, together including me i will be serving four people. i’m new to cooking and i know there is a lot of store brands but i’m gonna try with what i got. not pictured is a container of blue berries, one of cranberries and kerry gold unsalted butter. i also have virgin coconut oil, eggs and chicken breasts.

how would you guys marinate this rack of lamb? would the grey poupon and the med. herb cooking oil be okay? gonna roast in oven. i was thinking of sides, lemon/garlic asparagus with sea salt/pepper and buttered halved red potatoes? or perhaps a creamy asparagus bake with mozz/heavy whip cream and mushrooms? what kind of sides do you think i could whip up?

Anyway. Halved the bird. Browned it with some diced bacon. Added onions, pepper, garlic, black pepper, allspice, juniperberries, thyme, rosemary, bayleaves, a couple dried chilies, and obviously some salt.
