Can you make bread without lecithin--absolutely

But if you are mass producing a bunch of bread that you're adding tons of extra ingredients (preservatives and cheap ingredient substitutes) then it helps to have something bind it all together so you have a decent product that can stay on shelves for a month

Soy is relatively cheap--sunflower lecithin is an option if you want to try this at home, but most companies do not give a shit about what they put into food unless its something they can get sued over
