You're not biting confidently enough, and even if there is crackage, you can hold it together well enough if eating in one round or set it down carefully enough if you must, these kind of tacos are generally 3-4 to 5-6 bites worth depending on how big your mouth is, they can be eaten fairly quickly.

I am very good at eating them, almost never have any spilling or mess like most people seem to report. Pic related is the final bite of the last one I ate, as you can see I am very proficient.
