Darjeeling and keemun are basic teas you can find just about anywhere.
A little bit of googling says "royal milk tea" is a Japanese brewing method closer to masala chai than the usual British or Asian methods.
You simmer the tea in a pot for a few minutes and strain into a cup. Most recipes seem to call for 50/50 milk and water in the pot but technique varies.

Me again. I went ahead and gave it a shot anyway.
I don't have any darjeeling or keemun on hand so I tried assam and yunnan (3g each). The can also lists "uva", which seems to be a sort of tea from Sri Lanka. Sri Lankan tea is usually called "ceylon" in Western shops, but I'm fresh out of that too.
150mL of water in a pot, boiled and then reduced to a simmer. (some recipes say this is slightly too little water)
Tea in, simmered for ~2 minutes
Then I added 150mL milk (some recipes say this is slightly too much)
Instructions said "slowly bring back up to a simmer" but not at what heat setting or for how long this should take. With my burner at med-low, this took me about 8 minutes, stirring frequently to avoid gross milk film. (it filmed over anyway.)
Strained into a cup and added a bit of sugar.

Does it taste like the canned thing? No idea, never had it.
How does it compare to the usual English cuppa? In a word: thicc. The milk is sweeter and creamier, and the tea itself is "fuller".
The masala chai comparison earlier was apt, although obviously there aren't a dozen spices here.

Slightly too much hassle for a single serving but worth scaling up for guests.

So some questions about the gongfu and western methods.
How many of you actually rinse them with the hot water, and dump that water into individual cups? Does it make it a difference? I'm sure you could just pour the water into the sink if you do that step.
What exactly makes the gongfu method make a "better" tasting tea? I can't see a difference in waiting for a 3rd or 4th steep than just steeping the tea leaves longer. Even then the western mehtod can still do an extra steep or two. How is everyone's experience with either?

Decided to do a second steeping. It's a little sweeter this time and less bitter. Thicker too, almost like coffee. Maybe from steeping it longer? Tereré (basically a kind of iced mate that is consumed primarily in Paraguay and some regions of Brazil) is a different matter, there's no real complicated method to building it up like mate and you can basically freestyle it, use whatever you want as flavouring. Some people have it with various spices, natural or instant fruit juice, iced tea and even soft drinks and beer though that's kinda too much for me. Also, there's some pretty wild flavours in the market - pic related, in my local neighbourhood market, some tereré flavours like cherry, grape, pineapple, coffee and even "energy drink flavour", whatever that is.
If you search for it on YouTube you'll probably be able to find some pretty good tutorials on mate though (that is, if you can stand the horrifyingly annoying uruguayan/argentinian accent).

I don't really agree. It's usually the second one when the leaves have had time to open up more. Third and beyond are different, yes, but are usually just more astringent. It really depends on the time and temperatures for each steep.

I used about 4.5g of the tea. The first brew was too astringent, and so it was discarded and the process was repeated. It is finer than the black tea I'm used to, which is the most likely reason for the taste. I poured aside a small cup for later comparison. As tasted right now, it is an uncomplicated black tea, a bit oversteeped, even after adjusting for the finer leaves. The volume in the pot is about 350ml.

I will now set the plate for medium high and reduce the volume by about one half.

With the pot now at a bare simmer, the tea smells a bit different than the one in the cup. So far no changed smells, it just lacks the sharp front note. >>13005639
Missing from previous post: the cups will now be referred to as, in order from left to right, cup 1, cup 2, and cup 3

A powdery residue has settled in cup 1. In this context it should be noted that the tea was poured through a fine mesh strainer twice before reducing.

The taste of cup 1 was surprisingly weak initially. It lost the astringency and gained a subtly burned quality. It also became slightly sweeter. As the remaining tea was drank, I found that the taste was concentrated in the residue at the bottom of the cup. It was a very focused astringent and acidic taste. It lasted only a brief moment.

>> No.13005691

>>13005678
Cup 2 is very bland. The residue was stirred before drinking. It dispersed the astringency evenly and made it only barely noticeable. It is not a terrible cup of tea.

>> No.13005709

>>13005691
Cup 3 was very cooled by this time in the experiment. It was more acidic in taste, and had a smell, which the other cups did not-or had a very limited amount.

>> No.13005761

>>13005709
Overall the experiment is a failure on grounds of preparation: the tea used in the experiment possessed very limited taste notes and thus it is difficult to assess how much was lost in the process. From the limited results however, it can be extrapolated that boiling off water does indeed impact taste, however it cannot be determined if the influence was positive or negative.

Notes for future attempts:
•Make sure to brew the tea regularly beforehand in order to know the process of producing quality tea for comparison
•Use tea that has more complex taste
•The reduced liquid is prone to separation - stir before all transfers and ingestions
•Stir vigorously and use lower heat settings during the reduction process to avoid burning the pot

>> No.13005773

>>13005761
Now I have a pot of shitty concentrated tea :/ maybe I'll use it to make tea syrup

>> No.13005851

>>13005761
One final note to the experiment:
An independent tester (me mum) disliked the reduced brew, and, even in greater concentrations, described it as "tasteless". The test was blind with the same setup as my comparison, only with a new cup of regular tea brewed for heat. Having tasted the reduced ones again, I think I mislabeled the word "astringency". The reduced brew distinctly lacks tannins, which can be tasted in the regular tea.
Thus, I reassess the outcome of the experiment as a success, the result being that reducing tea by boiling results in crap tea.

How big is your tea stash? I haven't ordered tea samples in months out of guilt for not finishing what I already have. It takes a while for me to clear anything out unless I pick out teas I'm almost finished with. I might have a problem. Pic unrelated but cozy.

Good lord. I'm not sure if my entire stash measures up to 1.5 kilos. How do you get through all that tea without having to throw anything out?

Some asian market sencha I found. Pretty good actually, but it's just a substitute for me ordering more expensive green tea from Japan. Can't read the label so couldn't tell you more about it.

I almost exclusively drink puer so it keeps indefinitely. Also I brew at least 7 grams a day so that's ~2.5 kilos per year.

Ah, makes sense. I end up having to do a purge of older teas or stuff I know I won't drink at least once or twice a year. I've only tried a few puerh teas but I know it's something I need to branch out into, if only for the sake of having something that keeps well.

I feel ya. If you buy cakes from the major tea factories like dayi taetea and xiaguan it's pretty affordable. I rarely pay more than $10/100g. If you can swing it grab one of these $10 tuos, it's a great starting point with 10 years age on it and if you like it you can get 500g bags for $45 or so. https://www.ebay.com/itm/Xiaguan-Te-Ji-Tuo-Cha-Pu-erh-2009-100g-Raw/291143019693

it depends on the size of the gourd/mug you're going to use
for normal sized gourds 50gr is ok
i like small gourds for quick "cebadas" and 20-25gr is ok for them

Tea, if we're talking just steeped tea leaves, is good for you. The polyphenols in tea have been shown to have a good for the cardiovascular system and skin and might possibly help prevent some cancers.
>>13009051
>most health claims just feel like marketing to me. same shit as "drinking red wine can reduce heart cancer" ect.
Red wine has different polyphenols that are, on their own, good for you too, but unlike tea, red wine comes with alcohol, which is harmful. Tea isn't alcoholic, tea isn't sugary, and there isn't enough caffeine to cause harm like coffee could. It's just good for you.

A big box of mystery Indian tea from Walmart's international section won't be much better, but a metal tin of Twinning's or Alokozay is notably better.

There are a couple on yunnansourcing.com
Specifically the mei zhan wu yi is described as light roast plus the "light roast tie luo han" also the wild da hong pao is not described as light but looks much greener than most. Unfortunately the .us site has a much more limited selection.

It looks like mulch but it's shockingly creamy, like the aftertaste and mouthfeel you get when you eat whipped cream out of the can.
